This Brooklyn Delhi achaar is a relish made with fresh tomatoes, tamarind, a mix of Indian spices, red chili powder, unrefined cane sugar, and sesame oil. The result is a spicy, sour, savory, and sweet condiment that’s traditionally eaten with rice, curry, or yogurt, but can be the condiment to anything from eggs, sandwiches, grilled meats, or noodles. We also love stirring it into mayonnaise for the ultimate special sauce for your next burger.

After repeatedly filling suitcase after suitcase with jars of achaars—India’s equivalent of kimchi—following annual trips to India, Chitra Agrawal promptly got her fiancé, Ben Garthus, hooked. Once their supply started depleting in record time, Chitra realized the achaars available in the U.S. were sorely lacking—much too salty and decidedly uninspired. Since 2009, Chitra has been specializing in serving, teaching, and writing about Indian recipes using local ingredients at the ABCD's of Cooking and is currently writing a cookbook on South Indian vegetarian home cooking. Brooklyn Delhi products are an outgrowth of her work in food. With fresh, seasonal, and local (whenever possible) ingredients like tomatoes, rhubarb, garlic, and American gooseberries, Chitra has concocted her own versions of this spicy, sour, sweet, and savory Indian condiment—all handmade in small-batches in Brooklyn, NY, with all packaging design done by Ben, a designer and sculptor. Their popular condiments have been featured in Food & Wine, Saveur, Zagat, Cool Hunting and The Huffington Post.
